  1. Substitutions:
    * 1½ tablespoons vanilla extract
    * 1½ tablespoons amaretto (sub almond extract)
    * 1 teaspoon lemon extract

    Deviations:
    * creamed the butter and 3c sugar together at once
    * added eggs all at once without whipping
    * added flour by halves

    I’d also consider a cooler oven. 375°F for 75 minutes is about right, but lent a drier, chewy cake with a hardier crust. Its fussy. Knock it down as much as 15 degrees at 75 minutes, maybe.
